Goa: In a fantastic new cooking series, of ten episodes, five this week and five next week, with the acclaimed and well known Gary Rhodes, India its cuisine and culture are vibrantly brought to our tv screens. Gary is assisted by three 'apprentices', sous-chefs ~ Bushra Akram (a lawyer), Kalwant Sahota (works in the NHS) and Scott Davis (a chef). The sous-chefs do research whilst on tour for ideas. Don't miss this program. Episodes will provide insights to the following food types and places : the Royal Palace kitchen, Punjab, Coastal, Mughlai, Gujarati, Parsee, Bengali, Marwari and Street food. List of recipes.

To-night Gary is in Goa a former Portuguese colony. The Goan region is where Portuguese tradition has infleunced cooking; examples include spicy pickled prawns and peri peri masala, and don't miss the pork vindaloo. Coconut, curry leaves and tamarind all add to the wonderful aromas of this Coastal region.

The sous-chefs are out and about sampling cuisine and spices:

Bushra visits the jetty and sees the catch being brought in and samples cooking at a local hotel.

Scott goes to the fruit and veg market.

Kalwant looks for fresh fish in Mumbai.

A very pleasing not too hot vindaloo satisfies Gary.
