Have you ever wanted a really good quiche recipe?

What is quiche and in particular, quiche lorraine?

quiche is a dish made from a custard consisting of eggs and milk or cream in a pastry crust. You can add additional ingredients such as cooked meat and vegetables.

It is usual to add cheese to the egg mixture before the quiche is baked.

Quiche Lorraine  is the best know variety of quiche and has bacon or lardons as an additional ingredient.

So in fact quiche is a very simple, tasty dish. It is easy to make and quick to bake.

I have tried a number of different approaches and thought what would James Martin do?

James uses eggs, double cream, cracked pepper, flour, salt and thyme in his recipe.

Or maybe we could look at a Betty Crocker recipe? Betty Crocker's recipe uses crisply cooked bacon slices, crumbled shredded Swiss cheese finely chopped onion large eggs whipping cream or half-and-half, teaspoon salt, teaspoon pepper and ground red pepper (cayenne).
